Yellow Rice Biryani

This from my cookbook I got from Ethan.

Ingredients

1 Onion
1 inch piece of ginger
2 cloves garlic
1 large tomato
2 TBLS canola oil
3/4 tsp salt
1-1/2 tsp garam masala
3/4 tsp

turmeric

1-1/2 Cups basmati rice
3 C vegetable broth
1 C frozen peas & carrots

Preparation

  1. Peel onion, cut and dice add to medium bowl
  2. Peel ginger, grate 1 teaspoons and to onion
  3. Smash & Peel garlic & add to onion
  4. dice tomato and add to onion

  5. heat oil in pot over medium heat
  6. add 1 tsp salt to the onion mixture
  7. cook until onions are soft, stirring occasionally (5 - 7 min)
  8. Add garam masala, tumeric, and rice.
  9. Cook 2 minutes
  10. Add broth and turn heat to high and bring to boil.
  11. Reduce heat to low and cover.
  12. Simmer 10 minutes.
  13. Without stirring pot, pour frozen peas and carrots on top and cover.
  14. Cook another 10 minutes.
  15. turn off heat, fluff and stir rice with fork.
